When the owner of Sienna restaurant in Mashpee, Ma decided to expand from his first highly successful restaurant, he made the decision to add to the resources he already had on his management team to ensure smart, get-it-right-the-first-time growth. Graham Sillaman selected RealFood Consulting to plan and develop many aspects of his restaurant slated for the new Patriots Place destination shopping and entertainment venue in Foxboro, Mass.
Over the next twelve months, RealFood worked with ownership to complete a range of deliverables, culminating in the operating assumptions and back of the house functionality that would lay the groundwork for a successful start up. RealFood developed a kitchen design based on anticipated production loads, completed full CAD layout, executed an extensive bid process leveraging RealFood's vendor relations to deliver best pricing to ownership and oversaw installation and start up.
At the end of the day, RealFood's delivered a physical plant that was able to execute at a top level under the range of business levels associated with a location attached to a 69,000 seat football stadium.
